Revolutionize Your Morning: The Ultimate Cereal Crust Breakfast Pizza

One of the greatest joys in cooking comes from transforming everyday ingredients into something extraordinary and unexpectedly delicious. Today, we’re embarking on just such a culinary adventure – crafting a breakfast pizza with a crust made entirely from cereal! Yes, you read that right. Prepare to challenge your perceptions of breakfast and discover a surprisingly healthy, vibrant, and incredibly tasty way to start your day.

This breakfast pizza is made with a nutty cereal crust then topped with Greek yogurt and tropical fruits. It is simple, healthy and delicious!

Imagine a crisp, slightly sweet, and nutty crust, generously spread with creamy Greek yogurt, and then adorned with a colorful mosaic of fresh tropical fruits. This isn’t just a meal; it’s a breakfast experience that promises to delight your taste buds and energize your body. And the secret ingredient that makes it all possible? My absolute favorite cereal: Honey Bunches of Oats with Almonds, readily available at Walmart.

Beyond the Bowl: Unlocking Cereal’s Versatility

For many, cereal is synonymous with a quick pour-and-eat breakfast, a bowl of grains swimming in milk. While there’s certainly comfort in that tradition, I’ve always seen cereal as a treasure trove of culinary potential. It’s not just a morning staple; it’s a wonderfully versatile ingredient waiting to be explored.

Honey Bunches of Oats with Almonds is particularly special. Its unique blend of crispy flakes, crunchy oat clusters, and sliced almonds offers a delightful textural contrast and a perfectly balanced sweetness. It’s nutty, satisfying, and incredibly flavorful on its own, but its inherent crunch makes it an ideal candidate for innovative applications – like, say, a pizza crust! This commitment to quality and deliciousness is why I always reach for Post cereals when I’m looking for inspiration.

This recipe isn’t just about making something new; it’s about making something better. We’re challenging the notion that deliciousness must come at the expense of health. By utilizing the wholesome goodness of cereal for the crust, and pairing it with protein-rich Greek yogurt and fresh fruit, we’re crafting a breakfast that’s as nourishing as it is enjoyable. Who says you can’t have creativity and health in one delicious package?

A Healthier Take on the Classic Fruit Pizza

Fruit pizzas have long been a beloved treat, often appearing at brunches or as a refreshing dessert. However, many traditional recipes lean heavily into indulgent crusts made from cookie dough and overly sweet cream cheese frostings. While undeniably tasty, they often stray far from what one might consider a “healthy” breakfast or snack.

My quest for a guilt-free fruit pizza led me down a few experimental paths. I even tried a delicious oatmeal crust version that my family adored. But the idea of a cereal crust kept calling to me, promising an even more unique texture and flavor profile. And what a discovery it was! This cereal crust not only delivers on crunch and taste but also significantly lightens up the dish, making it a fantastic option for a wholesome breakfast or a delightful, lighter dessert.

The beauty of this breakfast pizza lies in its simplicity and balanced nutrition. You get the satisfying crunch of the cereal, the creamy tang of Greek yogurt, and the natural sweetness and vitamins from a medley of fresh fruits. It’s a complete meal that feels like a treat, ensuring you start your day on a high note without any post-indulgence regrets.

Crafting Your Cereal Crust Masterpiece: A Step-by-Step Guide

Making this breakfast pizza is surprisingly straightforward, and the results are truly rewarding. Here’s how we bring this innovative dish to life:

The Nutty Cereal Crust

Our foundation is, of course, the cereal crust. We begin by taking Honey Bunches of Oats with Almonds and coarsely grinding it. The key here is “coarsely” – you want to retain some of the original texture and crunch, not turn it into a fine powder. A few quick pulses in a blender or a good crush with a rolling pin in a sealed bag will do the trick perfectly.

This crushed cereal then gets mixed with just a few essential binding ingredients: coconut oil, egg whites, and a tiny pinch of salt. The coconut oil adds a lovely hint of tropical flavor and helps achieve that golden crispness, while the egg whites act as a crucial binder, ensuring the crust holds together beautifully when baked. The salt, though minimal, plays a significant role in enhancing all the other flavors, making the sweetness and nuttiness truly pop.

Once mixed, this delightful cereal mixture is pressed firmly into a round baking pan or pie plate. Precision is key here; a tightly packed crust will bake more evenly and hold its shape better. A quick bake in the oven for about 10 minutes is all it takes to set the crust. After baking, it’s vital to let it cool completely. This step ensures the crust becomes wonderfully firm and crispy, ready to support its colorful toppings without becoming soggy.

Creamy Greek Yogurt Topping

With our crust perfectly cooled, it’s time for the creamy layer. A generous spread of vanilla Greek yogurt forms the perfect canvas for our fruits. I recommend vanilla Greek yogurt for an extra layer of subtle sweetness and flavor, but plain Greek yogurt is also an excellent choice if you prefer to control the sweetness entirely with the fruit.

Greek yogurt not only offers a wonderful tangy contrast to the sweet fruits and nutty crust but also provides a significant protein boost, helping you feel fuller and more satisfied throughout the morning. Its thick, creamy texture is ideal for spreading and holding the fruits in place, making each slice a harmonious blend of textures and tastes.

A Tropical Fruit Medley

Now for the grand finale: the fruit! This is where you can let your creativity shine. I love a tropical combination of sliced mango, vibrant strawberries, and refreshing kiwi. These fruits offer a beautiful spectrum of colors and flavors, from the juicy sweetness of mango to the slight tartness of kiwi and the classic appeal of strawberries.

To elevate the experience even further, I add a sprinkling of toasted coconut flakes. Toasting the coconut isn’t just for aesthetics; it significantly enhances its nutty aroma and provides an extra layer of crunch that beautifully complements the cereal crust. To toast them, simply place the flakes in a dry skillet over medium heat and stir constantly until they turn golden brown – it takes just a few minutes.

This combination is truly a slice of paradise on a plate. The vibrant colors alone are enough to brighten any morning, and the medley of flavors creates a refreshing and utterly delightful breakfast.

A Family Favorite, Perfect for Busy Mornings

This breakfast pizza has become an instant hit in my household. My kids devoured their slices, even petitioning me to save the last piece for their breakfast the next day (a request I, admittedly, couldn’t quite fulfill – mama has to enjoy it too!). It’s a testament to how appealing and satisfying this seemingly simple dish truly is.

One of its best features is its adaptability for busy schedules. You can bake the cereal crust the night before, allowing it to cool completely. Then, in the morning, all you need to do is spread the yogurt and arrange the fresh fruit. This makes for an elegant, stress-free breakfast that looks impressive but requires minimal effort on a weekday morning. It’s also a fantastic option for meal prep, as it keeps well in the fridge for 2-3 days, making healthy eating convenient and accessible.

Beyond Honey Bunches of Oats, the Post family of cereals offers other fantastic choices for creative cooking. I highly recommend checking out their Grape Nuts Original cereal if you’re looking for another wholesome and versatile grain option. It’s incredibly good and perfect for adding texture and nutrients to a variety of dishes.

Breakfast Pizza With Cereal Crust

This breakfast pizza is made with a nutty cereal crust then topped with Greek yogurt and tropical fruits. It is a healthy, delicious, quick, and easy breakfast recipe.

Prep Time: 20 mins

Cook Time: 10 mins

Total Time: 30 mins

Servings: 6 servings

Ingredients

  • 4 cups Honey Bunches of Oats with Almonds cereal
  • 1/4 cup coconut oil
  • 2 egg whites
  • 1/8 teaspoon salt
  • 1 cup strawberries – sliced
  • 1/4 cup toasted coconut flakes (see Note 3 below)
  • 3/4 cup sliced mango (from about half a mango)
  • 2 kiwis – peeled and sliced
  • 1 cup vanilla Greek yogurt

Instructions

  1. Rub a 9-inch baking pan or pie plate with coconut oil. Set aside. Preheat oven to 350°F (180°C).
  2. Place cereal in a blender and pulse for about 5 seconds at a time, 2-3 times until coarsely ground. Alternately, place cereal in a ziploc bag then cover and crush with a rolling pin.
  3. Place ground crushed cereal in a bowl, add in coconut oil, egg whites, and salt. Mix well.
  4. Place the cereal mixture in the prepared pan and spread evenly then press down tightly.
  5. Bake the cereal crust in the preheated oven for 10 minutes. Take it out and let it cool completely.
  6. Spread the Greek yogurt over the cooled cereal crust then arrange fruits on top.
  7. Cut into wedges and serve!

Notes

  1. This breakfast pizza will keep for 2-3 days in the fridge.
  2. To ensure the crust comes out nicely out of the pan, cut some parchment paper into a circle then place on the bottom on the pan after greasing the pan.
  3. Toasting the coconut flakes enhances the nutty flavor. It also makes the coconut crunchier. To toast the coconut flakes, place them on a skillet on medium heat and keep stirring until brown. It takes about 5 minutes.
