Choosing Your Coconut Milk: Store-Bought vs. Homemade

When it comes to coconut milk, convenience often means a trip to your local grocery store. Depending on your geographical location, canned coconut milk is widely available and works perfectly for this recipe. However, we understand that not everyone has easy access to this tropical staple. If store-bought options are scarce or you simply prefer a fresher, more authentic taste, making your own coconut milk at home is a rewarding experience.

How to Make Homemade Coconut Milk:

  1. Start by cracking open a fresh coconut. You can find whole coconuts in many international markets or specialty grocery stores.
  2. Carefully remove the white flesh from the shell. Cut the coconut meat into roughly 1-inch pieces.
  3. Place the coconut pieces into a high-speed blender.
  4. Add warm water to the blender, just enough to cover the coconut pieces.
  5. Blend on high until the mixture is smooth and creamy, about 2-3 minutes.
  6. Pour the blended mixture through a fine-mesh sieve or a cheesecloth-lined strainer into a bowl.
  7. Squeeze out all the liquid from the pulp (the “chaff”) to extract as much milk as possible.
  8. Voila! You now have fresh, homemade coconut milk, ready to bring an unparalleled flavor to your rice.

Why settle for mundane white rice when you can effortlessly transform it into this aromatic and flavorful coconut rice? This dish embodies one of life’s true beauties: it’s incredibly simple to prepare, requires minimal ingredients, yet delivers an unbelievably satisfying and delicious result every single time.

The versatility of this easy coconut rice is truly remarkable. It serves as an excellent complement to virtually any stew or curry, making it a perfect stand-in for plain boiled rice. Coconut rice served with peppered fish

One of my absolute favorite ways to enjoy this delightful rice is alongside this flavorful peppered fish. The tender, spiced fish combined with the creamy coconut rice creates a harmonious balance of flavors and textures that is simply divine. But don’t stop there! Consider serving it with:

  • Grilled or baked chicken: A simple lemon-herb chicken or a more adventurous jerk chicken would be fantastic.
  • Pan-seared shrimp or scallops: The sweetness of the seafood pairs beautifully with the coconut.
  • Tofu or lentil curries: For a delightful vegetarian or vegan meal.
  • Roasted vegetables: A medley of broccoli, bell peppers, and sweet potatoes could create a light yet satisfying dish.
  • Any African or Caribbean stew: The rice soaks up the rich sauces wonderfully.

Ingredients

  • 2 cups parboiled rice (370g) *see Note 1
  • 2 cups coconut milk (480 ml)
  • 2 cups water (480 ml)
  • 1/2 teaspoon salt
  • 1/2 cup carrots – chopped
  • 1/2 cup peas (frozen peas – thawed and rinsed)

Instructions

  1. Combine water, coconut milk, and salt in a pot over medium heat. Bring the mixture to a gentle boil, ensuring the salt is fully dissolved.
  2. Thoroughly wash the parboiled rice two times under cold running water to remove excess starch. Add the rinsed rice to the boiling liquid. Stir gently, then cover the pot tightly and reduce the heat to low. Allow the rice to cook undisturbed until it has absorbed all of the liquid. This process typically takes about 10-12 minutes for parboiled rice.
  3. Once the liquid is absorbed, gently add the chopped carrots and thawed peas on top of the rice. Fluff the rice gently with a fork, incorporating the vegetables. Do not stir vigorously, as this can make the rice mushy.
  4. Turn off the heat and let the rice rest for a few minutes with the lid on to allow the flavors to meld and the rice to steam further. Serve immediately with your main dish of choice. I particularly enjoy it with this peppered fish or a hearty stew.

Notes

1. If you opt to use a different variety of rice, such as Basmati or Jasmine, it is crucial to adjust the liquid quantity accordingly. Different rice types absorb varying amounts of liquid. For example, Basmati rice will generally require less liquid to cook properly compared to parboiled rice to achieve a fluffy, non-sticky texture. Always check the package instructions for your chosen rice.

2. While the carrots and peas add a delightful freshness, color, and nutritional boost to the meal, feel free to omit them if you prefer. The coconut rice is delicious on its own, but the added vegetables provide a welcome textural contrast and enhance the visual appeal.

3. As mentioned above, if you find it challenging to source coconut milk in your area, you can easily prepare your own at home. Simply crack open a fresh coconut, cut the flesh into small pieces, blend it with warm water (just enough to cover), and then strain the mixture through a fine-mesh sieve or cheesecloth. This yields fresh, rich coconut milk for your recipe.
