What is Quiche?

At its heart, a quiche is essentially a savory egg pie. It consists of a tender, buttery pastry crust filled with a rich, creamy egg custard, often combined with various savory ingredients like cheese, meats, and vegetables. While many people associate it primarily with “Quiche Lorraine,” a classic French version featuring bacon and Gruyère cheese, the term “quiche” encompasses a wide range of variations.

This delightful dish has its roots in France, specifically the Lorraine region, hence the famous “Quiche Lorraine.” However, over centuries, it has evolved and traveled globally, leading to countless adaptations that delight palates worldwide. Today, while retaining its fundamental structure, modern quiches can be far removed from their French origins, offering endless possibilities for customization.

Beyond the classic Quiche Lorraine, popular versions include hearty mushroom quiche, vibrant spinach quiche, and even convenient crustless quiche for those looking for a lighter option. A simple cheese quiche, like the one we’ll explore, is always a crowd-pleaser. The beauty of quiche lies in its incredible versatility; you can customize it with almost any flavor combination, making it an excellent way to use up ingredients you have on hand and create a dish truly tailored to your preferences.

Why This Easy Quiche Recipe Stands Out

Our “Easy Quiche Recipe” is specifically designed to be approachable for home cooks of all skill levels, ensuring a fantastic result without unnecessary complexities. Here’s what makes it so effortlessly delicious:

  1. No Blind Baking Required: Traditional quiche recipes often call for blind baking the pie crust before adding the filling. This extra step, while sometimes helpful, isn’t always essential. For this recipe, we skip the blind baking, eliminating the need for pie weights or dry beans. You’ll find that the crust still turns out wonderfully golden and firm, without becoming soggy, simplifying the process considerably.
  2. Minimal Vegetable Prep: Many vegetables require pre-sautéing to prevent them from releasing too much moisture into the quiche, which can lead to a watery filling. In this recipe, we cleverly use green onions, which are fantastic for their mild flavor and don’t require any prior cooking. This saves you a significant amount of prep time and makes the process much quicker. If you opt for other vegetables like bell peppers or mushrooms, a quick sauté is still recommended to avoid a soggy result.
  3. Convenient Crust Options: While we provide a simple, from-scratch pie dough recipe for the best flaky crust, you absolutely have the option to use a store-bought pie dough or a pre-made crust. This can be a real time-saver when you’re in a pinch and still want to enjoy a homemade-tasting quiche. Just be mindful that using a pre-made crust might slightly alter the baking time, so keep an eye on it!

By streamlining these steps, we’ve created a recipe that delivers all the comforting deliciousness of a classic quiche with minimal fuss, making it a perfect addition to your regular meal rotation.

Essential Ingredients for a Perfect Quiche

A truly magnificent quiche relies on a combination of high-quality, flavorful ingredients. Here’s a closer look at what goes into our easy quiche, along with some tips for optimal results:

1. The Pie Dough

The crust is the foundation of any great quiche. Our recipe uses a simple homemade pie dough for that ultimate flaky texture:

  • Butter: Cold unsalted butter is crucial. The small pieces of butter create pockets of steam during baking, which results in a wonderfully flaky crust.
  • All-purpose flour: Provides the structure for the dough.
  • Baking powder: A small amount helps to tenderize the crust and adds to its flakiness.
  • Salt: Enhances the overall flavor of the crust.
  • Buttermilk (or milk): Cold buttermilk adds a slight tang and helps to create a tender, easy-to-work-with dough. If you don’t have buttermilk, you can easily make your own (see Note 1 in the recipe card).

Tip: For an even easier option, don’t hesitate to use a good quality store-bought pie dough or a pre-made pie crust from your grocery store. This significantly cuts down on prep time.

2. Eggs

Eggs are, without a doubt, the heart of any quiche. They form the rich, creamy custard that binds all the delicious fillings together. We recommend using large eggs at room temperature, as they mix more evenly with the milk or cream, resulting in a smoother, more consistent custard.

3. Whole Milk or Heavy Cream

This liquid component is essential for creating that signature creamy custard texture. Whole milk provides a good balance of richness, while heavy cream will yield an even more decadent and luxurious quiche. Choose based on your preference for richness.

4. Seasonings

Simple yet effective, seasonings elevate the savory profile of your quiche:

  • Salt and black pepper: These are fundamental for seasoning the egg custard, bringing out the flavors of the other ingredients. Adjust to your taste.
  • Chicken bouillon powder (optional): A touch of chicken bouillon powder adds an extra layer of savory depth and umami, making the quiche even more flavorful. You can omit this and simply use a bit more salt if preferred.

5. Vegetables

Vegetables add flavor, texture, and nutritional value. This recipe keeps it simple:

  • Green onions: We use chopped green onions for their mild, fresh onion flavor and vibrant color. The best part is, green onions don’t need to be sautéed beforehand, simplifying your prep. Sliced leeks are another excellent substitute if you prefer.

Top Tip: If you choose to add other vegetables like diced onions, bell peppers, spinach, mushrooms, or zucchini, it is crucial to sauté them first. Sautéing removes excess moisture, preventing them from making your quiche soggy as it bakes. A soggy quiche is definitely not what we’re aiming for!

6. Breakfast Meats

Meaty additions bring heartiness and a satisfying savory element to the quiche:

  • Chicken sausage: Diced chicken sausage adds a lovely meaty texture and rich flavor that pairs beautifully with the eggs and cheese. It’s a lighter alternative to traditional pork sausage.
  • Other options: You could also use crispy crumbled bacon, ham, or even smoked salmon for different flavor profiles.

7. Cheese

Cheese is a must-have for its melting quality and incredible flavor:

  • Cheddar cheese: Shredded cheddar cheese provides a fantastic kick of flavor and melts wonderfully, creating pockets of gooey goodness throughout the quiche.
  • Variations: Feel free to experiment with other types of cheese like Colby Jack for a milder, creamier melt, Swiss cheese for a nutty flavor, or Pepper Jack for a hint of spice.

Step-by-Step Guide: How To Make Quiche

Crafting a delicious quiche from scratch is simpler than you might think, especially with this beginner-friendly recipe that eliminates the need for blind baking. Follow these steps to create your perfect savory pie:

  1. Prepare the Pie Dough: In a large bowl, use a box grater to shred cold unsalted butter. This method ensures small, even pieces of butter, which are key for a flaky crust. Add the flour, baking powder, and salt. Gently mix these dry ingredients with the butter using your fingertips until the mixture resembles coarse crumbs. Gradually add cold buttermilk and mix just until a cohesive dough forms. Avoid over-kneading, as this can make the crust tough. Divide the dough into two equal portions, shape each into a disc, wrap them in plastic wrap, and chill in the fridge for at least 30 minutes. Chilling the dough hardens the butter, which is essential for that perfect flaky texture.
  2. Create the Creamy Egg Custard: While the dough chills, prepare your filling. In another large bowl, whisk together the eggs, whole milk (or heavy cream for extra richness), salt, black pepper, and chicken bouillon powder (if you’re using it). Whisk until all ingredients are well combined and the mixture is smooth and slightly frothy. This forms the heart of your quiche filling.
  3. Preheat Your Oven: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). This ensures the oven is at the correct temperature for even baking as soon as your quiche is ready.
  4. Roll Out the Dough: Take one half of your chilled pie dough from the fridge (you’ll save the other half for another quiche!). Place it on a generously floured surface to prevent sticking. Roll the dough out into a large circle, approximately 13 inches in diameter, ensuring it’s thin enough to fit your pie pan but thick enough to be sturdy.
  5. Fit the Dough into the Pie Pan: Carefully transfer the rolled-out dough over a 9-inch pie pan. Gently arrange the dough, pressing it into the bottom and sides of the pan to ensure it completely covers the interior. Trim off any excess dough around the rim of the pan. You can crimp the edges decoratively or simply press them against the pan for a rustic look.
  6. Assemble the Quiche: Now for the delicious fillings! Sprinkle the chopped chicken sausage, 3/4 cup of shredded cheddar cheese, and the chopped green onions evenly into the pie pan. Make sure these ingredients are well distributed across the bottom of the crust. This ensures every bite is packed with flavor.
  7. Add the Egg Mixture and Bake: Carefully pour the prepared egg mixture over the fillings in the pie pan. Once the liquid is in, sprinkle the remaining cheese over the top of the egg mixture. This top layer of cheese will melt into a beautiful golden crust.
  8. Bake to Perfection: Gently transfer the pie pan to your preheated oven. Bake for approximately 35-40 minutes, or until the center of the quiche is set (a knife inserted near the center comes out clean) and the crust is beautifully golden brown. If the crust edges start browning too quickly, you can cover them loosely with aluminum foil.
  9. Serve and Enjoy: Once baked, remove the quiche from the oven and let it cool for about 5 minutes before slicing. This allows the custard to fully set and makes for cleaner slices. Serve warm and savor every bite!

Serving Suggestions for Your Quiche

Quiche is incredibly versatile, making it suitable for a variety of meals and pairings. Here are some ideas to complement your delicious homemade quiche:

  • For Breakfast or Brunch: A slice of quiche pairs wonderfully with fresh, sliced avocados. The creamy texture of the avocado provides a lovely contrast to the savory quiche. You could also serve it alongside a simple fruit salad for a complete and refreshing morning meal.
  • For Lunch or Dinner: Elevate your quiche into a satisfying main course by serving it with a light, simple green salad. A vinaigrette dressing made with olive oil, vinegar, Dijon mustard, salt, and pepper is all you need. The crispness and slight acidity of the salad beautifully cut through the richness of the quiche. For a more substantial meal, consider adding a cup of warm soup, like a creamy tomato or a hearty vegetable bisque.
  • Other Accompaniments:
    • Roasted Vegetables: Asparagus, cherry tomatoes, or bell peppers roasted with herbs can add color and flavor.
    • Crusty Bread: A warm slice of crusty bread or a baguette is perfect for soaking up any leftover deliciousness.
    • Hot Sauce or Herbs: A dash of your favorite hot sauce or a sprinkle of fresh herbs like chives or parsley can brighten the flavors just before serving.

Storing and Reheating Quiche

Proper storage and reheating ensure your quiche remains delicious for days, making it perfect for meal prep or enjoying leftovers.

  • Storage: Once completely cooled, cover the quiche tightly with plastic wrap or aluminum foil, or transfer individual slices to an airtight container. Store it in the refrigerator for up to 3-4 days.
  • Freezing: For longer storage, quiche freezes beautifully. You can freeze a whole quiche or individual slices. Wrap the cooled quiche tightly in several layers of plastic wrap, then an outer layer of aluminum foil to prevent freezer burn. It can be stored in the freezer for up to 2-3 months. Thaw frozen quiche in the refrigerator overnight before reheating.
  • Reheating (Oven Method): For best results, especially with a whole quiche or larger slices, reheating in the oven is ideal. Preheat your oven to 300-325°F (150-160°C). Place the quiche on a baking sheet and heat for 15-25 minutes, or until warmed through. Covering it loosely with foil can prevent the crust from over-browning.
  • Reheating (Microwave Method): For individual slices, the microwave is a quick option. Heat on medium power for 1-2 minutes, or until heated through. Be aware that the crust might lose some of its crispness in the microwave.

Troubleshooting Common Quiche Issues

Even with an easy recipe, sometimes things don’t go exactly as planned. Here are some common quiche issues and how to troubleshoot them:

  • Soggy Bottom Crust: This is a frequent complaint!
    • Cause: Too much moisture from the filling (especially from uncooked vegetables), or the crust wasn’t cooked enough.
    • Solution: Always sauté high-moisture vegetables (like mushrooms, spinach, zucchini, bell peppers) before adding them to the quiche to remove excess water. Ensure your oven is fully preheated. Using a hot baking sheet or pizza stone under your pie pan can also help cook the bottom crust more thoroughly.
  • Cracked Quiche Top:
    • Cause: Overbaking or rapid cooling.
    • Solution: Start checking for doneness a bit earlier than the recipe suggests. The center should be set but still have a slight jiggle. Let the quiche cool gradually on a wire rack; avoid moving it immediately to a cold surface.
  • Watery Filling:
    • Cause: Similar to a soggy crust, this is usually due to moisture released by un-sautéed vegetables or using milk with too low a fat content.
    • Solution: Sauté vegetables as recommended. For a richer, firmer custard, consider using heavy cream instead of whole milk, or a combination of both.
  • Quiche Not Setting:
    • Cause: Undercooking.
    • Solution: Continue baking, checking every 5-10 minutes. The center should no longer be liquid. A knife inserted near the center should come out clean. Ensure your oven temperature is accurate; an oven thermometer can be helpful.
  • Burnt Crust Edges:
    • Cause: Exposed crust bakes faster than the filling.
    • Solution: If you notice the edges browning too quickly, you can cover them loosely with aluminum foil, or use a pie shield, for the remainder of the baking time.

Ingredients

Pie Dough

  • 1 cup unsalted butter, cold
  • 2 cups all-purpose flour (250 grams)
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • ½ cup buttermilk, cold (see Note 1)

Quiche Filling

  • 4 green onions, chopped (substitute with leeks if preferred)
  • 3 oz chicken sausage, diced (approx. 1 link)
  • 1 cup shredded cheddar cheese, divided (sharp, medium, or mild cheddar will work)
  • 6 eggs, at room temperature
  • ¾ cup whole milk (use heavy cream for more richness)
  • ¼-½ teaspoon salt (or to taste)
  • ¼ teaspoon chicken bouillon powder (optional, could omit and use more salt)
  • ¼ teaspoon ground black pepper

Instructions

  1. Make Dough: Use the shred side of a box grater to shred the cold butter into a large bowl. Add in flour, baking powder, and salt. Mix everything to combine gently with fingertips. Add in cold buttermilk and mix just enough to form a dough. Do not knead the dough. Divide dough into 2 equal portions. Shape each portion into a circle. Wrap the dough in plastic wraps and place in the fridge to chill for 30 minutes. Letting the dough chill hardens the butter, which is crucial for a flaky crust!
  2. Prepare Filling: In a large bowl, whisk together eggs, milk (or cream), salt, pepper, and chicken bouillon powder (if using). Whisk until well combined.
  3. Preheat Oven: Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
  4. Roll Out Dough: Remove one half of dough from the fridge and place on a generously floured surface. Roll it out into a large circle, about 13 inches in diameter.
  5. Place Dough Into Pie Pan: Carefully place the rolled dough over a 9-inch pie pan. Arrange the dough to ensure it completely covers the pie pan, then trim off any excess around the rim of the pan. Press the dough gently around the sides so it takes the shape of the pie pan.
  6. Assemble Quiche: Add the chopped sausage, 3/4 cup of cheese, and the chopped green onions to the pie pan. Spread all the ingredients around to ensure they are well distributed. Pour in the egg mixture, then sprinkle the remaining cheese over the egg mixture.
  7. Bake Quiche: Carefully place the pan in the preheated oven and let it bake for about 35-40 minutes until the center sets (a knife inserted near the center comes out clean) and the crust is golden brown.
  8. Serve: Let it cool for about 5 minutes before slicing and serving.

Notes

Buttermilk: To make buttermilk at home, add one and a half teaspoons of vinegar or lemon juice to a half-cup measuring cup. Add enough milk to make a full half-cup. Let it rest for 5 minutes; it will thicken slightly. Then, you can use this milk-vinegar mixture in place of buttermilk. Don’t worry, you won’t taste the vinegar!

Dough: This recipe only requires half of the dough. Use the other half to make another quiche later, or wrap it well and freeze for up to 3 months!
