Each recipe brings a unique twist, but today, our focus is squarely on the spectacular combination of chicken and shrimp, prepared in an authentic African style.

The Irresistible Duo: Chicken and Shrimp in African Fried Rice

The marriage of tender chicken and succulent shrimp in one harmonious dish is simply magical. If you haven’t yet experienced the sheer joy this duo brings to a meal, this African Chicken and Shrimp Fried Rice is the perfect introduction. The distinct textures and flavors of both proteins complement each other beautifully, creating a dynamic and utterly enjoyable eating experience that will leave you wanting more. This dish isn’t just a meal; it’s a celebration of rich ingredients and expert seasoning.

Unlocking Authentic African Flavors: The Foundation of Our Fried Rice

To craft this extraordinary shrimp and chicken fried rice, we begin with the star carbohydrate: basmati rice. I have a particular fondness for basmati rice due to its fragrant aroma and the way its grains remain beautifully separate after cooking, making it ideal for stir-frying. However, don’t feel limited – parboiled rice is another excellent option that yields fantastic results. The key is how we infuse the rice with epic flavors right from the start. We then perfectly cook our chicken and shrimp to golden perfection before sautéing a vibrant blend of fresh onions and a medley of aromatic African spices. The final flourish involves incorporating crisp, fresh vegetables and the pre-cooked, seasoned rice, all brought together in a sizzling stir-fry. The result? A truly epic fried rice, bursting with authentic African flavors and vibrant colors, making every spoonful an adventure.

Ingredients

  • 2 1/2 cups basmati rice (can substitute with parboiled rice for similar texture)
  • 1 1/2 cups shrimp – peeled and deveined
  • 1 pound chicken breast – cut into 1 inch slices (about 1/2 kg)
  • 5 garlic cloves – peeled
  • 1 inch ginger root – peeled
  • 1 sprig fresh parsley
  • 1/2 teaspoon ground white pepper
  • 2 bay leaves
  • 1/2 teaspoon curry powder
  • 3 small cubes Maggi (about 4g per cube) (substitute with 3 teaspoons of chicken bouillon powder)
  • 1 cup canola oil (or other neutral cooking oil)
  • 1 cup chopped onion (from half a large onion or 1 medium onion)
  • 1 stem green onion – chopped
  • 2 medium carrots – chopped
  • 1 handful green beans – chopped
  • 3/4 cup sweet corn (frozen works perfectly)
  • 3/4 cup sweet peas (frozen works perfectly)
  • Salt (to taste)

Instructions

  • 1. Begin by preparing your aromatic base: Blend together the peeled garlic cloves, ginger root, and fresh parsley with a small amount of water until a smooth paste forms. This blend is crucial for the authentic African flavor.
  • 2. Season your proteins: Lightly sprinkle a pinch of salt and 1/4 teaspoon of ground white pepper over the shrimp. Do the same for the chicken pieces (1/4 teaspoon salt and 1/4 teaspoon white pepper). Next, add half a teaspoon of the freshly blended garlic-ginger-parsley paste to the shrimp and another half teaspoon to the chicken. Mix both the chicken and shrimp thoroughly to ensure they are evenly coated with the seasoning. Set them aside to marinate briefly.
  • 3. Prepare the rice: Rinse the basmati rice approximately 4-5 times under cold water until the water runs clear, which helps remove excess starch. Transfer the washed rice to a pot. Add 2 cups of water, a teaspoon of salt, the bay leaves, curry powder, and the Maggi cubes (or chicken bouillon powder). Stir everything well to combine, then cover the pot and place it on high heat. Once the rice begins to boil, reduce the heat to medium and allow it to cook until all the liquid has been absorbed. Add 1 more cup of water, stir gently, and continue cooking until this liquid is also fully absorbed. Once cooked, cover the pot and let the rice rest for about 5 minutes. Finally, fluff the rice with a fork and spread it out on a large tray or baking sheet to cool completely. (Refer to Note 1 for a helpful tip on rice preparation).
  • 4. Cook the shrimp: Pour the canola oil into a large, deep pot or wok and heat it over medium-high heat for about 3 minutes. Add the seasoned shrimp to the hot oil and cook for approximately four minutes, flipping halfway through to ensure even cooking. Remove the cooked shrimp from the pot and set aside.
  • 5. Cook the chicken: Using the same pot with the remaining oil, add the seasoned chicken pieces. Cook for about four minutes, similar to the shrimp, flipping them once to brown on all sides. Remove the cooked chicken and set it aside with the shrimp.
  • 6. Sauté the aromatics and spices: In the same pot, add the chopped regular onions and green onions. Sauté for about 3 minutes until they become translucent and fragrant. Then, add the remaining garlic-ginger-parsley blend and stir well. Let this mixture cook for another 2 minutes, allowing the flavors to deepen.
  • 7. Incorporate the vegetables: Add the chopped carrots and green beans to the pot and stir well, coating them in the aromatic base. After a minute, add the sweet corn and sweet peas, stirring again to combine all the vegetables.
  • 8. Combine and stir-fry: Return the cooked chicken and shrimp to the pot with the vegetables and stir gently. Finally, add the cooled, seasoned rice and mix thoroughly until all ingredients are well incorporated and the rice is evenly distributed among the proteins and vegetables.
  • 9. Final sizzle and serve: Allow everything to sizzle together in the pot for about 2 minutes. Be careful not to overcook the vegetables, as we want them to retain their crispness. Turn off the heat immediately and serve this delicious African Chicken and Shrimp Fried Rice warm!

Notes for Perfect Fried Rice

1. For the best fried rice texture, consider boiling the rice a day before you plan to fry it. Day-old rice is ideal because it’s cold and drier, which prevents it from becoming mushy and breaking apart easily during the stir-frying process. This helps achieve those beautifully separated grains.
2. If you enjoy a bit of heat in your fried rice, feel free to add some hot pepper (such as habanero, scotch bonnet, or a chili of your choice) when you are blending the garlic, ginger, and parsley paste. Adjust the quantity to your preferred spice level.
3. For those who prefer a fried rice with a whiter appearance, as opposed to the slightly yellow hue imparted by curry powder, simply omit the curry powder from the rice cooking step. The flavor will still be fantastic!

Serving Suggestions & Perfect Pairings

This African Chicken and Shrimp Fried Rice is incredibly versatile and makes for a complete meal on its own. However, if you’re looking to expand your dining experience, it pairs wonderfully with a few complementary side dishes. Consider serving it alongside fresh plantains, either fried or roasted, to add a touch of sweet contrast. A simple, crisp side salad with a light vinaigrette or a creamy coleslaw can provide a refreshing element that balances the richness of the fried rice. For an even heartier meal, you could serve it with additional grilled fish or chicken. This dish is perfect for casual weeknight dinners, but its impressive flavors and presentation also make it a fantastic choice for special gatherings, potlucks, or family celebrations. It’s always a crowd-pleaser!

Customization and Dietary Adaptations

One of the beauties of fried rice is its flexibility. This African Chicken and Shrimp Fried Rice can be easily adapted to suit various preferences and dietary needs:

  • Spice Level: As mentioned in the notes, feel free to add fresh hot peppers (like habanero or scotch bonnet) to the ginger-garlic-parsley paste for an extra kick.
  • Vegetable Mix: While carrots, green beans, corn, and peas are classic, don’t hesitate to incorporate other crunchy vegetables like bell peppers (red, yellow, or green), chopped cabbage, broccoli florets, or snow peas. Add them during the vegetable stir-fry stage.
  • Protein Alternatives: If you prefer, you can swap the chicken breast for boneless chicken thighs or even turkey. For a vegetarian or vegan version, replace the chicken and shrimp with firm tofu (pressed and diced), mushrooms, or extra vegetables, and use vegetable bouillon instead of chicken bouillon.
  • Gluten-Free: Ensure that your chicken bouillon powder (if using as a Maggi substitute) is certified gluten-free. Most other ingredients are naturally gluten-free.

Storage and Reheating Tips

Leftovers of this African Chicken and Shrimp Fried Rice are just as delicious, if not more so, the next day. To store, allow the fried rice to cool completely to room temperature (within 2 hours of cooking). Transfer it to an airtight container and refrigerate for up to 3-4 days. When reheating, you can opt for the microwave for a quick meal, but for the best results, reheat it in a skillet or wok over medium heat with a tiny bit of oil. Stir-fry until heated through, which helps the rice regain some of its original texture and prevents it from becoming soggy. You can add a splash of water or broth if it seems too dry.
