Embracing Life’s Rhythms: A Return to My Online Diary and Recent Adventures

Dearest readers, I’m back! After what feels like an eternity – certainly my longest blogging break in recent memory – I’m thrilled to reconnect and share the vibrant tapestry of my recent experiences. It’s been over a week since my fingers danced across the keyboard to update my online diary, and in that short span, life has unfolded with a delightful blend of the unexpected, the heartwarming, and the utterly delicious. Join me as I recount the eventful days that have filled my world, from a significant personal style change to heartwarming family culinary escapades and profound spiritual reflections.

A Fresh Look and a Lesson in Perception: My New Hairdo Journey

My recent adventure began quite literally from the top – with a brand-new hairstyle, as you might have noticed from the introductory image. The decision for a fresh look always brings a certain excitement, a subtle shift in how you present yourself to the world. However, this particular hair transformation came with its own set of initial reservations and eventual pleasant surprises.

Upon seeing the final result, I confess I wasn’t entirely convinced. The way the stylist arranged the weave at the front immediately conjured nostalgic, albeit slightly humorous, memories of hair stylists from a bygone era. They seemed to possess a peculiar doctorate in making artificial hair look, well, undeniably artificial. While we all know it’s not our natural hair, there’s a certain unspoken agreement that the installation should strive for seamless integration, rather than a glaring declaration of its synthetic nature. I spent the next few hours catching glimpses of my reflection, wishing for a different outcome, even contemplating the drastic step of uninstalling it.

But then, practicality, and a touch of stubbornness, intervened. The investment in this new look was not insignificant: a whopping $40 for the labor and an additional $25 for the hair itself. In some parts of the world, like my beloved Cameroon, that sum represents a considerable portion of someone’s monthly earnings. The thought of letting that money go to waste was simply unacceptable. So, I resolved to embrace it, determined to rock this hairstyle with the utmost confidence, as if it were the most magnificent creation I’d ever had. And here’s where the unexpected twist occurred: I started receiving an abundance of compliments! Even some “Oyibos” (a local term for Westerners) would gush, their eyes wide with admiration, declaring my hair “so cute!” This experience served as a wonderful reminder that sometimes our own perceptions can be our harshest critics, and that a little self-assurance can truly transform how others, and eventually even ourselves, see things. It’s a testament to how shifting your mindset can turn an initial disappointment into a source of unexpected joy and validation.

Kids in the Kitchen: A Thanksgiving Culinary Adventure

Beyond personal style, the past week has been a whirlwind of family activity, especially centered around the kitchen. Following our previous cooking sessions with my energetic girls, their enthusiasm for culinary exploration has blossomed exponentially. Last week, the aroma of anticipation filled the air as Thanksgiving, a beloved national holiday here in the United States, approached. My daughters awoke on Thanksgiving morning, brimming with an extraordinary zest for life and an even greater ambition: they declared their intention to make “co slush,” their endearing term for coleslaw.

I gently instructed them to hold their horses, promising to join them in the kitchen as soon as I finished attending to a guest. However, the boundless energy and unwavering determination of young chefs often lead to independent initiatives! To my surprise (and slight horror), while I was preoccupied, they ventured into the kitchen on their own to tackle the “co slush.” What followed was a delightful, albeit messy, testament to their burgeoning culinary spirit. They mixed milk, mayonnaise, and haphazardly chopped carrots, culminating in a rather… unique concoction. The sight of my last large carrot sacrificed to their experimental endeavors initially sparked a wave of exasperation. But, as any parent knows, raising children often means preparing for such spontaneous, slightly chaotic scenes.

Amidst the laughter and the slight frustration, a deeper appreciation emerged. Despite the unconventional outcome, they demonstrated a clear understanding of the core ingredients that go into coleslaw. When I eventually stepped in to make the “real deal,” they watched with an intensity that only truly engaged learners possess. Their curious eyes followed every chop, every mix, every seasoning. It was a powerful lesson in both practical cooking and the patience required when guiding young minds. Witnessing their genuine interest and capacity to absorb new information was incredibly rewarding, reinforcing the idea that even culinary mishaps can be valuable stepping stones to learning. They learned a lot that day, and so did I about embracing the beautiful chaos of family life.

Here is the delicious coleslaw I eventually prepared:

A Thanksgiving Feast: Comfort Food and New Culinary Horizons

Thanksgiving, of course, presented an opportunity to delve into more elaborate culinary creations. This year, my menu featured a few intriguing dishes that proved to be absolute crowd-pleasers. One of the undisputed stars of the table was my baked Mac and Cheese, elevated with the rich flavors of sausage and finely chopped potatoes. It was a resounding hit, disappearing from the dish almost as quickly as it appeared!

My baked Mac n Cheese. I don’t have a casserole pan yet so I baked it in a cake pan. Yum!

In a delightful act of improvisation, and lacking a proper casserole dish, I baked this creamy, savory goodness in a cake pan. The result was pure comfort food perfection, a golden-brown crust giving way to gooey, cheesy pasta – a testament to how culinary constraints can sometimes lead to creative and delicious solutions. It’s truly amazing what a little ingenuity can achieve in the kitchen, especially when the goal is to create something deeply satisfying for loved ones.

Exploring New Traditions: My First Challah Bread

Another exciting culinary endeavor was my very first attempt at baking Challah Bread. This exquisite Jewish bread, known for its rich flavor and beautiful braided appearance, has always fascinated me. It’s an enriched dough, made luxurious with eggs and sweetened subtly with honey, giving it a distinct flavor profile that’s both comforting and elegant. The process of braiding the dough, a step that requires both precision and a gentle touch, was incredibly therapeutic. As the bread baked, its sweet, yeasty aroma filled the entire house, creating an atmosphere of warmth and anticipation that is truly synonymous with holiday baking.

The golden-brown crust and soft, airy interior were incredibly rewarding, marking a successful foray into a new baking tradition. It’s these kinds of experiences – stepping outside my culinary comfort zone and embracing different cultural dishes – that truly enrich my cooking journey. Our Thanksgiving table, though modest in size, was abundant in flavors and warmth, creating a perfect setting for gratitude and connection.

A Week of Diverse Delights: From Cameroonian Comfort to Sweet Treats

Beyond the Thanksgiving holiday, the kitchen remained a bustling hub of activity as I experimented with a variety of dishes, celebrating both my heritage and resourceful baking. Among these was Tukuni, a beloved Cameroonian dish of mashed potatoes and beans. This hearty and satisfying meal brings a taste of home and comfort, reminding me of the rich culinary traditions that shaped my upbringing.

Then there was Cornchaff, another delightful creation that made its way to our table. To give this dish a vibrant, fresh corn feel, I opted to use canned corn, a simple trick that infused it with a burst of sweetness and texture. It’s a testament to how readily available ingredients can be transformed into something truly special with a little creative thinking.

Resourcefulness also played a key role in my baking adventures. Faced with a considerable amount of overripe bananas, I saw an opportunity rather than a problem. These often-discarded fruits are nature’s sweetener, perfect for transforming into delicious treats. I whipped up a huge batch of Accra Banana, a popular fried banana fritter, alongside a comforting loaf of Banana Bread. The sweet aromas of cinnamon and ripe bananas filled the air, promising delightful indulgence.

And to round off the baking spree, a batch of Corn Muffins emerged from the oven. These wholesome, slightly sweet muffins are incredibly versatile, perfect for breakfast, a snack, or alongside a hearty meal. Each of these dishes, whether a family favorite or a resourceful creation, contributed to a week filled with warmth, flavor, and culinary discovery.

Cherished Moments and Timeless Truths

Amidst the cooking and the busy days, it’s the quiet, spontaneous moments that often mean the most. There’s a particular picture, a bit blurry, but infinitely precious, of me and my little “love bug.” It perfectly encapsulates the pure, unfiltered joy and connection that makes every challenging moment worthwhile. These fleeting snapshots of happiness are the true treasures of life, imperfect yet perfectly poignant reminders of what truly matters.

Speaking of what matters, a recent church service offered a powerful and timely message that resonated deeply within me. The core teaching was simple yet profound: everyone, regardless of background or belief, needs Jesus. While many paths and philosophies exist, the message underscored that Jesus offers a unique and definitive way. This isn’t just a theological point; it’s a call to action, an invitation to invest our time and compassion in sharing this transformative message with others. We are encouraged to “do for one what you wish you could do for all.” It’s a pragmatic and powerful perspective – as individuals, we may not possess the capacity to save the entire world, but each of us holds the potential to significantly touch, uplift, and change a single life. This spiritual principle encourages us to look beyond overwhelming global challenges and focus on the tangible, positive impact we can have right in front of us, one life at a time.
