Ingredients

  • 20-25 medium size Irish potatoes (or Idaho)
  • 6 tomatoes
  • 1 onion
  • 3 tablespoons ground garlic and ginger (6 cloves garlic, 1 inch ginger)
  • 1 sprig basil
  • 1 sprig parsley
  • 1 large carrot – chopped
  • 15 green beans – chopped
  • 1/3 green pepper – chopped
  • 4 pounds chicken (whole or part of choice) (about 2 kg)
  • 1 cup of canola oil
  • 2 stems of green onions – chopped
  • 3 small stock cubes (3.5g per cube)
  • Salt
  • 1 teaspoon white pepper

Instructions

  1. Cut the chicken into desired pieces and rinse thoroughly. Place the chicken in a pot, then add half a cup of water, 2 teaspoons of the ground ginger and garlic blend, a pinch of salt, and 1/4 teaspoon of white pepper. Cook on medium heat for 20 minutes, ensuring the water doesn’t dry out by replenishing it as needed. Once cooked, remove the chicken from the stock and place it on a greased oven tray. Broil or grill in the oven for about 10 minutes until lightly browned.
  2. Peel the potatoes, rinse them well, and place them in a pot. Add enough water to cover the potatoes halfway. Boil until they are tender, which typically takes about 20 minutes. Once done, transfer the potatoes to a greased oven tray and grill/broil them in a preheated oven for 10 minutes to develop a slight crust.
  3. While the chicken and potatoes are cooking, chop the tomatoes and blend them into a smooth paste. Chop the onion and set it aside.
  4. Heat the canola oil in a large pot. Add the chopped onions and sauté for about 3 minutes until fragrant and translucent. Stir in the blended tomatoes and fry, stirring continuously, until the tomato paste starts to stick slightly to the bottom of the pan, indicating it’s well-cooked and the raw tomato flavor has mellowed.
  5. Add the remaining spices to the tomato mixture and stir well to combine. Pour in the reserved chicken stock to form a flavorful stew base. Add more water as needed, depending on your desired consistency – add more for a soupier hot pot. Season the stew generously with salt, stock cubes (like Maggi), and the rest of the white pepper. Mix thoroughly.
  6. Next, add your chopped vegetables to the stew, starting with the green onions, followed by the carrots, green beans, and bell peppers. Stir everything together gently to ensure the vegetables are coated in the rich sauce.
  7. Carefully add the grilled chicken pieces to the pot and mix them into the stew, ensuring they are well integrated and coated with the sauce.
  8. Finally, add the grilled potatoes to the pot. Mix gently, being careful not to break the tender potatoes. Once all ingredients are thoroughly combined and heated through, turn off the heat.
  9. C’est prêt! Your delicious Cameroonian Potato Hot Pot is ready to be served. Enjoy it with a refreshing chilled glass of orange juice or your favorite beverage!
