Fueling the Journey: A Delicious Start to the Week

What is life without food? Lol. Natural brown rice, chicken sauce and stewed greens.
Indeed, what is life without delicious, nourishing food? It’s often the simple, homemade meals that bring the most comfort and joy, especially amidst a busy week. Our week kicked off with a truly satisfying and wholesome dish that left everyone feeling energized and content. A plate piled high with fluffy natural brown rice, perfectly cooked and bursting with wholesome goodness, served as the ideal base. Accompanying it was a rich and savory chicken sauce, simmered to perfection with aromatic spices that filled the kitchen with an inviting scent. And to complete this culinary delight, a generous portion of vibrantly stewed greens, packed with essential nutrients, added a delightful texture and freshness to every bite. This meal wasn’t just sustenance; it was a moment of gathering, a pause to appreciate the simple pleasures of good food shared with loved ones. It set a wonderful tone for the eventful days that followed, providing the perfect fuel for all our exciting adventures.
An Autumnal Delight: Our Apple Orchard Adventure
One of the absolute highlights of my week was our much-anticipated trip to a local apple orchard with my daughters, N and S, and some of their schoolmates. Autumn is undeniably one of my favorite seasons, and there’s nothing quite like the crisp air, the vibrant changing leaves, and the joyous tradition of apple picking to fully embrace it. We had been looking forward to this outing for weeks, talking about the different types of apples we might find and the delicious treats we’d bake with our harvest.

Even getting ready for the outing had its own charm, complete with a quick, slightly blurry mirror selfie attempt with my adorable, albeit fussy, baby. Such are the joys and realities of mom life – sometimes, a clear photo isn’t the priority when you’re just trying to get out the door for an adventure! But once we arrived at the orchard, all thoughts of hurried mornings vanished, replaced by the enchanting atmosphere of rows upon rows of apple trees, laden with ripe fruit.

The girls’ faces lit up the moment they saw the tractor, piled high with hay bales, ready to take us deeper into the orchard. Sitting on the hay, bumping along as the tractor rumbled, was an experience in itself. The laughter and excited chatter of N, S, and their friends filled the air, mingling with the earthy scent of hay and the sweet, crisp fragrance of apples. It was a perfect moment, embodying the carefree spirit of childhood.
S and her bag of apples
Once we reached our designated picking spot, the real fun began. The girls eagerly grabbed their bags and fanned out, searching for the reddest, juiciest apples. S was particularly determined, meticulously inspecting each apple before plucking it from the branch and carefully placing it into her bag. Her sense of accomplishment as she showed off her growing collection was simply heartwarming.
N putting an apple in a bag. I sight someone in glorified diapers, aka training pants. I should share her potty training story…
N, ever so focused, carefully added her selections to her bag. It was amusing to catch a glimpse of one of the little ones sporting what I fondly call “glorified diapers,” or training pants. It brought a smile to my face, reminding me of the ongoing journey of potty training – a saga that perhaps deserves its own dedicated post one day, filled with its own unique blend of triumphs and hilarious mishaps. These moments, both big and small, are truly the fabric of parenting.
My sweeties
Seeing “my sweeties” enjoying themselves so thoroughly, surrounded by nature and the simple joy of discovery, filled my heart. These are the moments we strive for as parents – creating experiences that foster curiosity, independence, and lasting memories.
Baby Y chillaxing
Even baby Y found her own way to “chillax” amidst the excitement, perfectly content in her stroller, taking in the sights and sounds. It’s always a challenge to balance the needs of children of different ages during family outings, but seeing everyone, from the energetic apple pickers to the peacefully observant infant, enjoying the day in their own way, made the effort entirely worthwhile. We returned home with bags full of apples, rosy cheeks, and hearts full of happy memories, already planning what delicious apple creations we would make.
Connecting with Community: A Heartwarming Baby Shower
Beyond our family outing, another significant event of my week was attending a wonderful community baby shower right in my own neighborhood. This event was specifically organized for expectant mothers and those with children under the age of one. A wave of emotions washed over me as I walked in, remembering how I had been pregnant last year and had heartbreakingly missed the previous shower. I almost shed a tear thinking about it then, so being able to attend this year felt incredibly special and affirming. It’s moments like these that truly highlight the importance of community support systems for new and seasoned mothers alike.

The shower was an absolute treasure trove of resources and camaraderie. I received a generous bounty of freebies, which every new mom knows are a true blessing, and gleaned so much useful information – everything from local support groups to tips on infant care and navigating the early stages of motherhood. But perhaps even more valuable than the material gifts and practical advice was the atmosphere itself. The room was filled with smiling faces, mothers sharing stories, offering encouragement, and simply enjoying each other’s company. It was a beautiful display of sisterhood and collective support. As we say, “Who no like ‘njoh’?” – a phrase that perfectly captures the joy and enjoyment of such communal gatherings. While I wish I had captured more of the vibrant energy of the event, I did manage to snap one picture of the stunning display cake, a beautiful centerpiece that added to the festive and celebratory mood. It was a day that truly nourished the spirit, reminding me that we are all in this journey of motherhood together.
Kitchen Creations: Baking a Yummy Coconut Cake with the Girls
Another incredibly rewarding experience this week was spending time in the kitchen with my girls, baking a truly “yummilicious” coconut cake. To be perfectly honest, at first, I was quite tired and a little reluctant to embark on a baking project with them. As any parent knows, involving children in cooking often means a longer, messier process, filled with constant supervision and instruction. However, I pushed past my initial hesitation, and oh, am I glad I did! The sheer excitement radiating from their little faces as they prepared to bake a cake with Mummy was infectious.
We transformed my simple plain cake recipe into something extraordinary by incorporating a few key ingredients. We started by adding dry coconut milk to the batter, which infused a subtle, creamy richness. Then, a few drops of coconut essence amplified that tropical aroma, making the whole kitchen smell divine even before the cake hit the oven. The girls were absolutely thrilled to help with various steps: carefully breaking eggs (with varying degrees of success and a few giggles at the occasional shell fragment!), vigorously stirring the batter, and patiently listening to my “lectures” – which were really just gentle instructions on measuring, mixing, and the science behind baking. These moments are invaluable opportunities to teach not just culinary skills but also patience, precision, and the joy of creating something together. This entire experience perfectly embodies the #Catchthemyoung philosophy, showing them the fun and rewards of hands-on learning.
Once the batter was smoothly blended and poured into the baking pan, we took it up another notch. I let the girls sprinkle a generous amount of desiccated coconut over the top. As the cake baked, the desiccated coconut toasted slightly, adding a delightful texture and an even more intense coconut flavor. The aroma that filled our home as it baked was utterly intoxicating, a promise of the delicious treat to come. The final product was a moist, tender coconut cake with a perfectly golden, fragrant crust. It was devoured with gusto, and the girls beamed with pride, knowing they had played a crucial role in its creation. I absolutely cannot wait to make this delightful cake with them again soon!

Venturing into Beauty: My Mary Kay Journey Begins
Amidst all the family fun and culinary adventures, a significant personal milestone arrived this week: my Mary Kay starter kit! The anticipation for its arrival had been building, and when that package finally landed on my doorstep, it felt like the start of a whole new chapter. Unboxing it was like opening a treasure chest filled with possibilities. The kit is incredibly comprehensive, packed with “lots of stuff” – a fantastic array of skincare products, makeup essentials, and tools to get started. Beyond the products themselves, it also contained “lots of samples” to share, which is perfect for introducing friends and potential clients to the quality of Mary Kay. And of course, there was “lots of literature” – invaluable guides, training materials, and business insights that will be essential as I embark on this new venture.
I made a modest investment of $85 for the kit, which I believe is a fantastic value for the wealth of products and business resources it provides. This isn’t just about selling cosmetics; it’s about empowerment, learning new skills, connecting with women, and building something of my own. I’ve been eagerly delving into the contents, familiarizing myself with the products and envisioning how I can help others feel confident and beautiful.

A Foundation of Faith: Sunday Reflections
As always, my week culminated in the spiritual nourishment of Sunday church service. It was an incredibly edifying experience, providing a profound anchor amidst all the bustling activities and personal pursuits. The message delivered was simple yet deeply impactful, a truth that resonated deeply within my spirit: we were created by God, for God. This core tenet serves as a powerful reminder that life is not fundamentally about our own desires, ambitions, or even our struggles; it is ultimately all about Him.
In a world that constantly encourages self-focus and personal achievement, this message offers a liberating perspective. It calls us to shift our gaze from ourselves to the Divine, reminding us of our ultimate purpose and the source of true fulfillment. Understanding that our existence is rooted in a divine plan, and that our lives are meant to glorify a higher power, brings immense clarity and peace. It recontextualizes our daily routines, our challenges, and our joys, weaving them into a larger, more meaningful narrative. This spiritual reflection helps put everything else into perspective – the apple picking, the baby shower, the new business venture, and even the simple act of cooking with my children. Each experience, big or small, becomes an opportunity to live out that purpose, to find gratitude, and to recognize the blessings poured into our lives. It’s a truth that grounds me and provides strength for the week ahead.
Looking Ahead to More Adventures
