  • 2 large eggs (room temperature)
  • ½ cup vegetable oil (or oil of choice)
  • 1 cup liquid whole milk (240 ml)
  • 2 teaspoons vanilla extract
  • ½ cup boiling water (120 ml)
  • 1 cup chocolate chips (plus more for topping if desired)

For the Chocolate Buttercream:

  • ½ cup grated chocolate (85 g, or good quality chocolate chips)
  • 1 teaspoon neutral oil (e.g., vegetable or canola)
  • 2 cups powdered sugar (240 g, confectioners’ sugar)
  • ½ cup unsalted butter (113 g, softened to room temperature)

Instructions

  1. Preheat your oven to 350°F (180°C). Line two 12-cup muffin pans with 24 cupcake liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cocoa powder, instant coffee powder, granulated sugar, and salt until the mixture is uniform in color.
  3. Add in the whole milk, vegetable oil, eggs, and vanilla extract. Whisk until just combined to form a smooth batter. Be careful not to overmix, as this can lead to tough cupcakes.
  4. Carefully add the boiling water and mix gently until just combined. The batter will be thin, but this is normal and contributes to the moist texture.
  5. Gently fold in the chocolate chips by hand using a spatula, ensuring they are evenly distributed throughout the batter.
  6. Fill each cupcake liner approximately two-thirds full with the batter.

Simply chop the bars into small chunks to yield approximately 1 cup, then fold them into the batter as directed. If you prefer, you can also completely omit solid chocolate pieces from your cake.

3. This recipe yields 24 cupcakes and typically requires two 12-cup muffin pans. If you only have one cupcake pan or muffin tin, be sure to bake your cupcakes in batches to avoid overfilling and uneven baking. Always allow the pan to cool slightly between batches.
