Ingredients

  • 6 hardboiled eggs – peeled
  • 2 cups all-purpose flour (approximately 250 grams), plus extra for kneading
  • 1/2 teaspoon instant yeast
  • 2 tablespoons margarine (or unsalted butter, softened to room temperature)
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • Pinch of freshly grated nutmeg
  • 1 large egg – lightly beaten
  • Vegetable oil for deep frying

Instructions

  1. In a large mixing bowl, combine the flour, salt, sugar, instant yeast, and softened margarine. Use your hands or a pastry blender to mix these dry and semi-solid ingredients until the margarine is fully incorporated and the mixture resembles coarse crumbs.
  2. Add the beaten egg to the mixture, stirring gently. Gradually add water, a little at a time, mixing until a sticky, shaggy dough begins to form. Be careful not to add too much water; the dough should be pliable but not overly wet.
  3. Lightly flour a clean work surface (like a pastry board or countertop). Transfer the sticky dough onto the floured surface. Begin to knead the dough, sprinkling with additional flour as needed to prevent sticking. Knead continuously for about 2-3 minutes until the dough becomes smooth, elastic, and no longer excessively sticky to the touch. It doesn’t need to rise for a long time as it will proof slightly during the wrapping process and when it hits the hot oil.
  4. Divide the kneaded dough into six equal portions. Take one portion of dough and roll it out into a thin, flat disc using your hands or a rolling pin. The disc should be large enough to completely enclose a hardboiled egg.
  5. Place a peeled hardboiled egg in the center of the rolled-out dough. Carefully bring the edges of the dough up and around the egg, sealing it completely. Use your hands to gently mold and shape the dough-covered egg until it forms a smooth (or as smooth as possible!) ball or oval. Ensure there are no cracks or open seams where the egg could be exposed during frying. Repeat this process with the remaining eggs and dough portions.
  6. In a deep pot or Dutch oven, heat a generous amount of vegetable oil over medium-high heat. The oil should be deep enough to fully submerge the egg rolls. Heat for approximately 5-10 minutes, or until a small piece of dough sizzles immediately upon contact with the oil, indicating it’s ready.
  7. Carefully place the prepared egg rolls into the hot oil, ensuring not to overcrowd the pan. Fry them for about 10 minutes in total, turning them halfway through cooking, until they achieve a beautiful, even golden-brown color on all sides. The dough should be thoroughly cooked and crispy.
  8. Once golden brown, remove the African Egg Rolls from the oil using a slotted spoon and transfer them to a plate lined with paper towels to drain any excess oil. Serve them warm.
