Seasoning cubes, like Maggi or a dedicated crayfish seasoning cube, are used to enhance the savory notes and bring all the flavors into harmony. And, of course, a touch of salt to balance. For an optional but highly recommended addition, I often include a cup of dried fish, specifically anchovies known as “njanja moto” in Cameroon. This adds another layer of protein and a beautiful, smoky complexity that elevates the dish. While optional, it’s a cherished traditional component that many find indispensable.

Place the raw groundnuts in a wide frying pan or a sturdy pot. Roast them over medium heat for approximately 15 minutes. It is crucial to stir continuously throughout this process to ensure even roasting and prevent the groundnuts from burning. They should turn a beautiful golden brown color.

Once the groundnuts are thoroughly roasted, spread them out on a tray or large plate to allow them to cool down completely. This cooling process usually takes about 30 minutes and is essential for achieving the perfect texture when grinding.

In a blender or food processor, combine the habanero pepper with about 2 tablespoons of water. Blend until you achieve a smooth paste. Adjust the amount of pepper to your spice preference.

Grind the cooled roasted groundnuts. You can use the small cup attachment of your blender, a coffee grinder, or a specialized peanut grinder for this step.
