The Inspiration Behind These Irresistible Biscuits
The journey to these exceptional Cream Cheese Biscuits began, as many great recipes do, on a quiet Sunday morning. I was looking to whip up something special for my family’s breakfast, something comforting yet memorable. With a strong love for cream cheese and a block in the fridge calling my name, an idea sparked: why not combine the beloved tang of cream cheese with my go-to homemade biscuit recipe? I often bake biscuits from scratch, so experimenting with the dough felt like a natural next step.
The result surpassed all expectations! The addition of cream cheese transformed the ordinary into the extraordinary. The biscuits emerged from the oven not just buttery, but incredibly moist, tender, and with a delightful cream cheese essence that was both subtly sweet and savory. This unique flavor profile, coupled with their perfectly fluffy texture, instantly crowned them the “best biscuits ever” in our household. They’re so good, in fact, that often they don’t even make it to the jam or butter stage – they’re perfect just as they are!

Why Cream Cheese is the Secret to Unforgettable Biscuits
The inclusion of cream cheese isn’t just for flavor; it’s a game-changer for the texture and overall experience of these biscuits. Here’s why this humble ingredient takes your biscuits to the next level:
- Unmatched Tenderness: Cream cheese introduces additional fat and moisture into the dough. This extra fat inhibits gluten development, resulting in an incredibly tender crumb that practically melts in your mouth. Unlike traditional butter-only biscuits which can sometimes be dry, cream cheese ensures a moist and rich interior.
- Subtle Tang and Richness: The slight acidity of cream cheese adds a beautiful, subtle tang that complements the sweetness and butteriness of the biscuit. It creates a more complex flavor profile, making these biscuits incredibly addictive and less one-note than standard versions.
- Enhanced Fluffiness: The fat content in cream cheese, much like butter, creates steam during baking. This steam helps to lift the layers of dough, contributing to that desirable fluffy and airy texture.
- Golden Brown Crust: The sugar and fat in cream cheese also aid in achieving a gorgeous golden-brown crust, giving your biscuits an appealing finish that promises deliciousness within.
In short, cream cheese transforms a good biscuit into a truly great one, adding moisture, richness, and a nuanced flavor that will have everyone asking for your secret ingredient!
Mastering Cream Cheese Biscuits: Key Ingredients
Creating these phenomenal cream cheese buttermilk biscuits requires just five essential ingredients, each playing a vital role in achieving their signature taste and texture. Simplicity and quality are key here!
- Unsalted Butter (Cold): The foundation of any great biscuit. Using cold, unsalted butter is crucial for creating flaky layers. As the butter melts in the oven, it releases steam, separating the layers of dough and resulting in a light, airy texture. Unsalted butter allows you to control the salt content in the recipe.
- Cream Cheese (Cold): The star ingredient! Like butter, keeping your cream cheese cold helps maintain its structure when mixing, contributing to the biscuit’s tenderness and rich flavor without making the dough overly sticky too soon. It adds moisture, tang, and unparalleled softness.
- Self-Rising Flour: This convenient flour contains leavening agents (baking powder) and salt already mixed in, simplifying the recipe and ensuring a consistent rise. It’s perfect for achieving that lofty, fluffy biscuit.
- Granulated Sugar: Just a touch of sugar enhances the sweetness and balances the tang of the cream cheese, contributing to a pleasant flavor profile. It also aids in browning the biscuits beautifully.
- Buttermilk (Cold): Buttermilk is essential for a tender biscuit. Its acidity reacts with the leavening agents in self-rising flour (or baking powder if you’re making your own), creating carbon dioxide bubbles that make the biscuits light and airy. The tang of buttermilk also complements the cream cheese beautifully. Ensure it’s cold for best results.
It’s important to note that I do not recommend using cake flour for this recipe, as its lower protein content can result in a less structured biscuit. Stick to self-rising or a homemade equivalent for the best results.
How to Make Self-Rising Flour (DIY Tip)
Don’t have self-rising flour on hand? No problem! You can easily make your own using all-purpose flour. For every 1 cup of all-purpose or plain flour, simply add 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt. Whisk these ingredients together thoroughly, and you’ve got a perfect substitute for self-rising flour, ready to elevate your biscuit game. This tip is a lifesaver when you’re craving fresh biscuits but lack a specific ingredient.

Step-by-Step: Crafting Your Fluffy Cream Cheese Biscuits (Overview)
Making these delightful Cream Cheese Biscuits is a straightforward process, perfect for bakers of all skill levels. Here’s a quick overview of how easily they come together:
- Prepare Cold Fats: Start by grating or dicing very cold butter and cream cheese into a large mixing bowl. Keeping them cold is key to flakiness.
- Combine Dry Ingredients: Add your self-rising flour and sugar to the bowl with the fats. Gently mix these until a coarse, crumbly mixture forms.
- Add Buttermilk: Pour in cold buttermilk and mix just until a soft, shaggy dough comes together. Avoid overmixing.
- Shape and Cut: Turn the dough onto a floured surface, gently pat or roll it to your desired thickness, and cut out uniform biscuit circles using a cutter or glass.
- Bake to Golden Perfection: Arrange the cut biscuits on a parchment-lined baking sheet and bake in a preheated oven until they’re beautifully golden brown and risen.
In just a few simple steps, you’ll have a batch of warm, fragrant, and incredibly delicious cream cheese biscuits ready to enjoy!

Essential Tips for Perfect Biscuits Every Time
Achieving perfect, flaky biscuits is an art, but it’s an art easily mastered with a few key techniques. These tips will help ensure your Cream Cheese Biscuits are consistently tender, fluffy, and absolutely delicious:
- Keep Ingredients COLD: This is arguably the most crucial tip for any biscuit recipe. Both your butter and cream cheese must be thoroughly chilled, straight from the fridge. The cold fat creates pockets within the dough. As the biscuits bake, these pockets release steam, which pushes the dough layers apart, resulting in that desirable flaky texture. If your fats warm up, they’ll incorporate too fully into the flour, leading to dense, cake-like biscuits. Even your buttermilk should be cold!
- Work Quickly: Building on the previous point, minimize the time your hands are in contact with the dough and the ingredients. Your body heat can warm the butter and cream cheese prematurely. Work efficiently from grating the fats to cutting the biscuits, and get them into the oven as swiftly as possible. A cold dough going into a hot oven is the secret to a high rise.
- Grate Your Butter (and Cream Cheese!): Using a box grater to grate cold butter and cream cheese into your flour mixture is a game-changer. This technique creates tiny, even pieces of fat that are perfectly distributed throughout the flour, ensuring uniform flakiness and making it much easier to incorporate without overworking the dough. It saves time and effort compared to dicing.
- Do Not Overmix the Dough: Mix the dough just until the ingredients are combined and a shaggy mass forms. Overmixing develops gluten, which can lead to tough, chewy biscuits. A slightly sticky or shaggy dough is exactly what you’re looking for.
- Gentle Handling is Key: When rolling or patting out your dough, be gentle. Avoid excessive kneading or pressing, which can compact the layers and prevent a good rise. A light touch ensures a tender crumb.
- Use a Biscuit Cutter (and Don’t Twist!): A sharp-edged biscuit cutter creates clean cuts, allowing the biscuits to rise evenly. When cutting, press straight down and lift straight up. Twisting the cutter can seal the edges of the biscuit, hindering its ability to rise into beautiful, flaky layers. If you don’t have a cutter, the rim of a sharp glass will work.
- Bake at a High Temperature: A hot oven (400°F/200°C) is essential. The high heat sets the crust quickly and creates a burst of steam from the cold fats, contributing to a rapid and impressive rise.
By following these simple yet effective tips, you’ll be well on your way to baking batches of perfect, golden-brown cream cheese biscuits that are wonderfully flaky and tender every time.

These versatile Cream Cheese Biscuits are fantastic on their own, but they also offer a wonderful foundation for customization and creative serving.

- Sweet Citrus Zest: For a brighter, sweeter biscuit, add 1-2 teaspoons of lemon or orange zest when you mix in the sugar.

Storage and Reheating Advice
To enjoy your Cream Cheese Biscuits at their best, it’s ideal to serve them warm, fresh from the oven. However, they store wonderfully for later enjoyment with these tips:
- Room Temperature: Store cooled biscuits in an airtight container at room temperature for up to 2-3 days. While still delicious, they are best consumed within the first day for optimal freshness and texture.
- Freezing Unbaked Dough: You can prepare the biscuit dough, cut out the circles, and then arrange them on a baking sheet. Freeze until solid (about 1-2 hours), then transfer the frozen biscuit rounds to a freezer-safe bag. They can be stored for up to 1 month. When ready to bake, place frozen biscuits on a parchment-lined baking sheet and bake directly from frozen, adding a few extra minutes to the baking time until golden.
- Freezing Baked Biscuits: Fully baked and cooled biscuits can also be frozen. Wrap individual biscuits tightly in plastic wrap, then place them in a freezer-safe bag. They’ll keep for up to 2 months.
-
Reheating:
- Oven: For best results, reheat biscuits in a preheated oven at 300°F (150°C) for about 5-10 minutes, or until warmed through. This helps restore their crisp exterior and soft interior.
- Microwave: While quicker, microwaving can sometimes make biscuits a bit chewy. If using a microwave, reheat for 15-30 seconds, keeping an eye on them to prevent overcooking.
- Toaster Oven: A toaster oven works perfectly for reheating a couple of biscuits, bringing them back to their fresh-baked glory.

Ingredients
- 8 tablespoons unsalted butter, cold
- 8 oz cream cheese, cold
- 4 cups self-rising flour see Note 1 on how to use all-purpose flour
- 2 tablespoons sugar
- 2 cups buttermilk
Instructions
-
Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
-
Grate Butter. Using the shred side of a grater, grate cold butter into a large mixing bowl. Alternatively, dice the butter and place into the bowl.
-
Grate Cream Cheese. Grate the cold cream cheese into the butter. It will be very sticky but that’s okay. Try to separate it with your hands if necessary.
-
Alternatively, dice the cream cheese and place into the bowl (it will still be very sticky).
-
Add in Flour and Sugar. Add the self-rising flour and sugar to the grated butter and cream cheese mixture. Mix together using your fingertips or a pastry cutter until well combined and the mixture resembles coarse crumbs.
-
Add Buttermilk. Pour in the cold buttermilk and mix everything together just until a shaggy dough forms. If the dough is too sticky to handle, sprinkle on a little extra flour and mix briefly.
-
Cut Biscuits. Generously flour a clean working surface. Gently press the dough onto the surface into a 3/4-inch thick round or rectangle. You could also roll the dough to be 3/4 inch thick. Using a 2.5-inch biscuit cutter (or the rim of a glass), cut the dough into circles. Gather any leftover dough scraps into a ball, gently press or roll out again to 3/4-inch thick, and cut into circles. Repeat until all the dough is used.
-
Place Biscuits on Parchment Paper. Carefully place the cut-out dough onto a large baking sheet lined with parchment paper, leaving a small space between each biscuit.
-
Bake. Place the baking sheet into the preheated oven and bake for 15 minutes, or until the tops are golden brown. If the tops are not browning enough during baking, you can turn on the broiler for the last 1 minute (watch carefully to prevent burning!).
-
Serve. Serve warm with your favorite toppings. These biscuits are fantastic on their own, or spread with jam or butter.
